Buffalo Cauliflower Bites

These are a quick, family friendly alternative to boneless buffalo bites.

By using a chickpea or brown rice flower as well as the cauliflower, you are creating a high protein meal that will also help you feel full longer.

Why are high protein foods important during cancer treatment?  During treatment patients often lose muscle mass and not fat.  This will help to replenish these depleted sources.  In addition, it will help with enhanced cell growth and repair, as well as improvements in blood clotting and infection fighting.

Ingredients:
1 head of cauliflower
2 teaspoons garlic powder
2 teaspoons butter
1 1/3 cup red hot sauce (I prefer Franks)

Directions:

1) Cut cauliflower into small florets
2) Rinse produce
3) In a bowl, toss with the flour, water, and garlic powder
4) Heat air fryer to 400.  Roast cauliflower for 20 minutes
5) In the meantime, melt the 2 teaspoons of butter and combine the red hot sauce.
6) In another bowl, toss the roasted cauliflower with red hot sauce.  Return to air fryer for another 20 minutes at 400.

Creamy Tomato Basil Soup

This soup was rich, hearty, perfectly seasoned with locally sourced ingredients (thank you to my mom for the tomatoes) and from Stephanie Hansen's cookbook "True North".

So why soup for cancer care food?  Tomato soup, in general has great nutrients, vitamins, and antioxidants that help the body recharge and fight other illnesses.  If you are looking for this recipe, check out Stephanie Hansen's cookbook through your local bookseller or at Amazon.com
